2 c sifted cake flour
3 tsp baking powder
tsp salt
2 tbsp granulated sugar
c shortening
5 tbsp milk or light cream
2 eggs
melted butter or margarine

Directions:
Directions:
Sift together the flour, baking powder, salt and 2 tsp of the sugar. Cut shortening into this, using two knives or a pastry blender, until the mixture is the consistency of coarse corn meal. Add milk. Separate 1 egg; reserve 1 tbsp or the white. Beat the rest of this egg with the other egg; add to flour mixture. Roll to inch thickness on a lightly floured board. Cut into 3 inch squares; then cut each square into triangles. Arrange on a greased or oiled cookie sheet; brush each scone with some of the egg white, slightly beaten, and sprinkle with remaining sugar. Bake in hot oven of 450 for 10 minutes. Serve hot. Or the next day, split the scones with a knife; brush the cut sides with melted butter or margarine, and toast them under the broiler until golden brown. Serve immediately.
