1 stick butter, melted (1/2 cup)
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
2 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
3/4 sour cream or greek yogurt
2-3 very ripe bananas, mashed

Directions:

1. Preheat oven to 350º. Grease or spray a 9-inch loaf pan, set aside.

2. In a large bowl whisk together the melted butter and sugars. Add the eggs on at a time and then the vanilla. Whisk until smooth.

3. Sprinkle the flour, baking soda, and salt over the butter mixture and stir to combine. Fold in the bananas and sour cream.

4. Pour batter into prepared pan and bake for 55-60 minutes or until crust is golden brown and a toothpick inserted comes out clean. Cool until just warm before serving.
