6 Med. Potatoes
1/4 Cup plus 2 TBLS Butter
2 Cup Shredded cheese
2 Cup Sour Cream
1/2 Cup onion (green onion is best)
1 tsp. Salt
1/4 tsp. WHITE PEPPER

Directions:
Directions:
Boil potatoes, drain, and chill in fridge, then grate potatoes into a bowl.
Combine 1/4 Cup butter and cheese in sauce pan until almost melted,
stirring occasionally. Remove from heat.
Blend together sour cream, onions, salt, and pepper. Mix well.

Pour sour cream mixture over potatoes, stir lightly, turn into a 2 quart casserole dish. Dot with the 2 TBL butter. Bake at 350º for 45 minutes.

These are soooo good.
Once you make them, the next time will be easier.

I boil the potatoes, drain them, and sit them on a paper towel on a plate and put in fridge. I do this the night before. (I also turn them over after a few hours so they are dry. )

I put them in a chopper instead of grating; either way works.

This is a dish I take to McKee Christmas. They go fast!
One year I put hash browns in. Everyone noticed something was different.
It was really heart warming!
I never did it again.
I appreciated they noticed.
