4 whole chicken breasts (boned, split and skinned)
½ cup panko bread crumbs
½ cup Parmesan cheese (grated)
2 teaspoons oregano leaves
½ teaspoon garlic salt
¼ teaspoon pepper
4 tablespoons butter (softened)
1 tablespoon chopped parsley
4 ounces jack cheese cut into 8 strips
5 tablespoons butter (melted)

Chicken breasts should either be purchased so they are ¼ inch thick and/or pounded between sheets of waxed paper with a mallet to flatten. Combine bread crumbs, parmesan cheese, oregano, garlic salt and pepper in a pie pan. In separate bowl, combine softened butter, parsley, and oregano. Spread about ½ tablespoon of the butter mixture in each chicken breast. Lay a strip of jack cheese over butter mixture. Fold lower edge of breast over the filling, fold in sides, and roll to close. Dip each bundle in the melted butter and then roll in the bread crumb mixture. Place bundles, seam side down, without touching in a 9x13 inch baking pan. Drizzle remaining butter. Cover and refrigerate for at least 4 hours or until the next day. Bake uncovered in a preheated 425ºF oven for 20-25 minutes or until chicken is no longer pink when slashed.
