4 T Butter
4 T Flour

2 Tins Chicken Broth
2 C Whipping Cream
1 t Dijon Mustard
2 1/2C Shredded Gruyere or Swiss Cheese
Dash Tabasco

Directions:
Directions:
1. Combine butter and flour in 2 qt saucepan and cook over low heat for several minutes.
2. Stir in whipping cream and cook for several minutes.
3. Add chicken broth and mustard and heat through.
4. Slowly stir in cheese stirring as it melts and thickens.
5. Serve in heated soup bowls and add a few croutons to the top.
