1 cup brown sugar
1 cup white sugar
1 stick of butter
2 tbsp of cornstarch
1 cup of heavy cream
1 cup of pecan
1 tsp of vanilla extract

Directions:
Directions:
Mix all ingredients except the pecans in a 3qt pot or bigger. Cook on medium heat, constantly stirring. Using a candy thermometer, continue cooking until the mixture reaches 250 degrees. Remove pot from heat and continue stirring until the mixture loses its sheen. Add in the pecans, continue stirring until mixture thickens. Begin dropping spoonfuls of the candy onto sheets of wax paper. Let candy sit for an hour. Ready to serve.

This is a family recipe given to me by my Aunt Dot, a very funny Cajun lady. For my family, it isnít the holidays unless we make pralines. They were my fatherís favorites.
