Salisbury Steaks Recipe

1/3 cup milk
7 tablespoons panko bread crumbs
1 pound 90-percent lean ground beef
Salt and pepper
4 tablespoons butter
3 Onions, sliced thin
1 T tomato paste
2 T corn starch
2 T water
1 Tin beef broth
¼ cup ruby port or Marsala wine

1lb White Mushrooms, sliced thin (optional)

EARLY PREPARATION
1. Whisk milk and panko crumbs in large bowl. Add beef, 1/2 teaspoon salt, and 1/2 teaspoon pepper and knead until combined. Shape into four 1/2-inch-thick oval patties and transfer to parchment-lined plate. Refrigerate for 30 minutes or up to 4 hours.

2. Melt 1 tablespoon butter in large nonstick skillet over medium-high heat. Saute onions until carmelized. Set aside.

3. Saute meat patties until well browned, about 5 minutes per side. Transfer to plate and refrigerate.

3. In now empty saute pan used for patties, stir in tomato paste and cook until browned, about 2 minutes.

Optional: If wanting mushrooms - saute the sliced mushrooms in a separate skillet.

4. Slowly stir in broth and port/marsala and bring to simmer. Add water to cornstarch, add to beef broth mixture and stir until thickened. Save until ready to serve.

JUST BEFORE SERVING
1. Preheat oven to 400º. Place patties on rack on cookie sheet and bake for 20-25 minutes.
2. Heat gravy to just simmering. Season sauce with salt and pepper.
3.Serve patties along with bowls of cooked onions, mushrooms and gravy.

I remade this for Jan - March 28, 2020. I liked the idea of cooking and serving the mushrooms, onions and gravy separately so that people can create the Salisbury Steak - THEY want to have.
