Ingredients: 1/2 - 3/4 lb Extra Lean Ground Beef
1 each (small) Red & Green Bell pepper, finely chopped
1/2 C BBQ sauce
1 can Buttermilk Biscuits (10 count)
3/4 C Mexican Finely Shredded Cheese

Directions: |
Directions:Heat oven to 375 degrees.
Brown meat with peppers in a medium skillet. Remove from heat and stir in BBQ sauce.
Separate biscuits. Press 1 biscuit onto bottom and up the sides of each of the 10 muffin cups.
Bake biscuits for 4-5 minutes and remove from oven.
Spoon the meat mixture into the biscuit cups; press into the cups with the back of a spoon. The filling will be mounded.
Bake 8-10 minutes or until the biscuits are lightly browned. Top with cheese and place back into the oven for 3-4 minutes or until melted. |

Notes: This recipe is good to make ahead and freeze. Prepare recipe as directed and allow to cool completely. Wrap tightly and store in the freezer for up to 3 months. Thaw in the refrigerator, then place cups back into a muffin pan and bake at 350 degrees for 10 minutes or until heated throughout.
