Ingredients: 2 T Olive Oil 2 lb Italian Sausage (Hot) Cut into ½" pieces (skin on) 2 Sweet Medium onions, peeled, cut in half and and then sliced 8 Garlic cloves (minced) 2 Red Peppers (sliced into strips) 1 28 oz Tin Diced Tomatoes. (Italian - San Marcos if possible) 1 6 oz Tin Tomato Paste (Italian) ¼ C. Red Wine ¼ C Fresh Basil - chopped ¼ C Fresh Oregano chopped Salt and Pepper
1 lb Penne Parmesan Cheese (shredded)

Directions:1. Heat olive oil in saucepan- medium high heat. Add sausage and cook through. 2. Add onion and garlic. Heat through 5 - 20 minutes. Add Red Peppers and cook until just losing their crispness. Add tomatoes and tomato paste and mix well, then add red wine, basil and oregano, salt and pepper and heat through. 3. Simmer at low temperature for 1 to 2 hours . 4. Cook penne in boiling salted water until al dente and drain. Serve penne in individual pasta bowls with sauce.
Serve with Parmesan Cheese |

Notes: I invented this recipe myself. At an Italian restaurant I visited there was a menu item called Frank Sinatra's favourite pasta. I ordered it, but didn't particularly love it. So I invented what I thought sausage and red pepper pasta should look like. I made this for Jan on March 30 2020. We loved it! The smell while it cooked was great. We thought this would be a great meal for company. The sauce is easy and can be made ahead.
