1 C Butter
1 lb Spaghetti or other thin pasta
12 oz Mizithra cheese grated about 1 1/2 C

Directions:
Directions:
1. To clarify butter, melt in a saucepan over low heat. Remove from heat and let sit a few minutes. Milk solids will settle on thew bottom. Skim foam from the surface. Pour into another saucepan, discarding the solids that remain.
2. Heat the clarified butter over low heat 8 to 10 minutes. or until golden brown - making sure it doesn't burn.
3. While butter is cooking, oook spaghetti in boiling salted water until al dente. Drain and place on a serving platter.
4. Sprinkle with cheese and pour on butter and add pepper. Toss
5. Serve.
