2 Medium Zucchinis
¾ Pound Ground Meat
1 small onion, chopped
½ Cup Sliced Fresh Mushrooms
½ Cup Sweet Red Pepper, Chopped
½ Cup Green Pepper, Chopped
1 Cup Shredded Cheddar Cheese (I use Smoked Gouda)
2 Tblsp Ketchup (I use hot Ketchup)
Salt and Pepper to taste

Trim the ends of the zucchini. Cut in half lengthwise; scoop out the pulp, leaving a ½” shell. Finely chop pulp. In a skillet, cook beef and onion, brown beef, drain. Add pulp, mushrooms and peppers and heat until veggies are somewhat soft, but not mushy. Remove and place in bowl add ½ Cup cheese, ketchup, salt and pepper; mix well. Spoon into the zucchini shells. Place on greased baking dish. Sprinkle with remaining cheese, bake, uncovered at 350 deg for 25-30 minutes or until zucchini shells are tender.
