I don't think the garlic is optional, but I really like garlic.

Except 45 minutes is not long enough and this recipe really takes about an hour in the oven. And Robyn is too young for this to pair with Chardonnay. When Robyn gets old enough, the meatloaf pairs much better with Pinot Grigio or better yet, Verdicchio or Vermentino, or a Rose. Anything but Chardonnay.
