2 Bunches of Spinach - washed, dried, and torn in pieces
3 Hard cooked eggs, sliced
2-3 Green onions chopped
1/2 lb Mushrooms, sliced
1/2 C Swiss - Emmenthal Cheese - grated

Dressing
3/4 C Vegetable Oil
3 T White Wine Vinegar
1 Egg
2 Garlic Cloves
1 t Dry Mustard
1/2 t Sugar
Salt and Pepper to taste

Directions:
Directions:
1. Place all prepared vegetables in a large salad bowl.except the sliced egg
2. Place all dressing ingredients in a blender - adding oil last by slowly pouring onto other ingredients as blender is on.
3. When ready to serve - toss vegetables in dressing, plate the salad, decorate each plate egg slices and serve
