1 pound sausage
3 cups frozen hash browns and/or 1 package crescent rolls
1 cup shredded cheddar cheese (use pepper jack for variety)
1 small can of green chilis
6 eggs
¼ cup milk
¼ teaspoon of salt
⅛ teaspoon of pepper
2 tablespoons parmesan cheese

Directions:

Crumble and brown sausage. Spray 9x13" pan with cooking spray. Place hash browns or crescent rolls in the bottom of the pan. Spread green chilis and spoon sausage on top of base. Cover with cheddar cheese. Beat together eggs, milk, salt and pepper. Pour over mixture and sprinkle with parmesan. Bake at 375ºF for 25-30 minutes. Note: Ham or bacon can be substituted for sausage or the dish can be meatless.
