2 pounds small/tiny potatoes (about 18)
6 tablespoons extra-virgin olive oil
1 Tablespoon minced garlic
Kosher salt and ground black pepper

Directions:
Directions:
1. Place the potatoes in a microwave safe dish and microwave on high - for 10 to 15 minutes. Checking every few minutes to make sure the potatoes are not over done.
2. Place the potatoes on a rimmed cookie sheet - spread out to cover the entire sheet with some space between.
3. Place second baking sheet on top; press down firmly on baking sheet, flattening potatoes until 1/3 to 1/2 inch thick.
4. Mix the oil and minced garlic together in a small bowl and then drizzle/spread over the squashed potatoes.
5. Generously salt and pepper the potatoes.
6. Roast the potatoes on the cookie sheet at 375 for about 1/2 hour, until well browned - checking to make sure they turn crispy but are not burnt.
7. Serve immediately.
