1/2 Cup flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

1/2 C butter, softened
3/4 Cup sugar

2 eggs
1 tsp vanilla
1/2 tsp allspice (or 1/4 tsp cinnamon and 1/2 tsp nutmeg)

4 bananas ( I like to use 3 frozen, drained and 1 fresh banana)
1/3 Cup soaked raisins (see note below)
1/3 Cup chopped walnuts, if desired

Preheat oven to 325º

Mix together in glass measure or bowl flour, baking powder, baking soda and salt.

In a mixer bowl with electric hand beater cream butter and sugar. Beat in eggs 1 at a time. Add vanilla and allspice. Mix in dry ingredients. Add bananas and raisins and walnuts if using.

Pour into baking tins.

Originally a Nigella Lawson recipe I started making this bread in England and have adjusted to our tastes over the years.

NOTE: I marinate the raisins in a big batch and then save for months and use as required. Basically a bag or container of raisins. 2 1/2 c. raisins, 1 cinnamon stick, 1 vanilla bean, 1/2 tsp allspice, 1/2 tsp cinnamon. Cover w/ brandy or rum 1/4-1/2 c. Marinate for a day, week, month or longer.
You can use plain raisins these just give it a bit of extra special goodness.

I like to double the bread recipe and freeze the loaves. 2 large or 4 small loaves.
