½ cup finely chopped celery
½ cup finely chopped onion
¼ cup snipped parsley
3 T. butter
3 T. flour
¼ tsp salt
⅛ tsp pepper
2 cups diced leftover roast beef
3 cups of beef broth (juices from cooking the roast)
½ cup cooked peas
½ cup carrots

pie pastry (enough for one 9-inch pie crust)

Directions:
Directions:
In saucepan, cook celery, onion, and parsley in butter until tender. Blend in flour, salt, and pepper; add broth all at once. Cook and stir until thickened and bubbly; stir in meat, peas, and carrots.

Pour mixture into 9-inch pie pan. Top with crust. Make slits in pie crust and brown in a 425º oven.
