Date Cookies Recipe

1 cup + 1 Tbsp butter
1 cup sugar
1 cup brown sugar
3 eggs
4 cups flour
1 tsp baking soda
tsp salt

1 lb dates
1 cup crushed pineapple
cup sugar
cup water
1 cup chopped nuts

Beat butter and sugars until fluffy. Add eggs, beating well. Combine dry ingredients; stir into mixture. Refrigerate a few hours or overnight. Combine filling ingredients in medium saucepan and heat until well blended; cool slightly and add nuts. Roll chilled dough into rectangle. Spread with filling and roll into log; slice and bake in 375 oven.
