2 Tbsp. olive oil, divided
1 1/2 lbs. boneless, skinless chicken breasts, trimmed and cut into1/2 inch cubes (shortcut: use cooked or rotisserie chicken)
1 cup onion, chopped
2 tsp. garlic, chopped
2 poblano peppers, seeded and chopped (or green pepper)
1 jalapeņo, seeded and diced (optional)
1 1/2 tsp. salt
1 1/2 tsp. ground cumin
1/2 tsp. ground coriander
1 Tbsp. tomato paste
6 cups chicken stock
1/4 cup chopped fresh cilantro leaves
2 tsp. fresh lime juice

In a Dutch oven or large heavy pot, heat 1 Tbsp. oil on medium-high heat. Add chicken and cook through, about 5 minutes. Remove chicken from pan and set aside. Add remaining oil and cook onions, garlic, peppers, salt, cumin, and coriander for 5 minutes. Add chicken stock and bring to a simmer. Simmer 20 minutes. Return chicken to the pot and simmer 5 minutes longer. Add cilantro and lime juice, stir well. Remove from heat and cover to keep warm.

Serve with a variety of toppings: avocado, tortilla chips, shredded cheese, sour cream.
