3 cups flour
1 cup shredded zucchini
1/3 cup sugar
3 Tbsp. Parmesan cheese
5 tsp. baking powder
1/2 tsp. baking soda
1/3 cup butter, melted
1 cup buttermilk
2 eggs
2 Tbsp. onion, grated

Directions:
Directions:
Preheat oven to 350 degrees. Grease a 9x5x3 inch loaf pan.

Mix flour, zucchini, sugar, cheese, baking powder, baking soda, and salt in a medium sized bowl. In a separate bowl, mix butter, buttermilk, eggs, and onion. Stir wet ingredients into dry ingredients just until combined. Spread into loaf pan, and bake for 55 to 60 minutes. Bread is ready when a toothpick inserted into center of loaf comes out dry. Cool on a rack.
