8 1/2 cups flour
1 1/2 cups chopped cooked spinach
4 eggs
1/2 pound lean beef
1/2 pound pork tenderloin diced
1/4 cup wine
3 tlbs tomato sauce
butter
1 quart milk
grated parmesan cheese
salt
black pepper

Directions:
Directions:
Mix 8 cups flour with spinach and eggs,knead on flour board until firm dough is formed. Roll out thin and cut into 4 inch squares Cook squares in salted boiling water. Remove dip in cold water drain.drain and dry Make meat sauce and a bechamel sauce. For the meat sauce saute onions celery carrot alt and pepper in butter until lightly browned Add beef pork wine and tomato sauce and simmer for 10 minutes. For the bechamel sauce melt 1/2 cup butter in saucepan add 1/2 cup flour and pinch of salt and stir until smooth.Add milk gradually stirring until thick and smooth. Put alternate layers of lasagne meat sauce ,bechamel sauce and cheese in baking dish Bake at 350 for 15 minutes
