1 c (250 ml) all purpose flour
1 c (250 ml) whole wheat flour
2 tsp (10 ml) baking powder
1/2 tsp (2 ml) salt
1/2 tsp (2 ml) ground cinnamon
1/4 tsp (1 ml) ground nutmeg
1/4 tsp (1 ml) baking soda
1/3 c (75 ml) shortening
2/3 c (150 ml) sugar
2 eggs
1 1/2 c (375 ml) shredded cooking apples
1 c (250 ml) walnuts chopped divided

Stir together all purpose and whole wheat flours, baking powder, salt, cinnamon, nutmeg and baking soda. Cream together shortening, sugar and eggs. Stir in the flour mixture and apples. Set aside 2 tbsp. (30 ml) of the walnuts for garnish. Stir remaining walnuts into batter. Turn batter into greased 8 1/2 X 4 1/2 X 3" (1.25 L) loaf pan and sprinkle with reserved walnuts. Bake in 350ºF (180ºC) oven 1 hour or until done. Cool on wire rack 10 min and remove from pan. Cool completely.
