1 can black eyed peas, drained and rinsed
1 can black beans, drained and rinsed
1 can shoepeg corn, drained and rinsed
4-5 roma tomatoes, seeds removed, diced
2-3 avocados, diced
4 green onions, sliced
1/2 bunch cilantro, chopped finely
1-2 limes
ground pepper and salt to taste

1/2 Italian salad dressing

Directions:
Directions:
Pour drained peas, beans and corn into large serving bowl. Make sure diced tomatoes are fairly dry so there is not too much liquid in dip. Add cilantro and sliced onions. Dice avocados and squeeze lime juice over them so they don't brown too quickly and then add to the bowl. Add Italian dressing and stir to coat all the ingredients. May add salt and pepper to taste. Chill in refrigerator until cold and flavors blend. This is best served the same day with tortilla chips.

My family loves this dip for New Years Day so we will have luck in the coming year by eating the black eyed peas.
