4 cups fresh sliced peaches or 20 oz of frozen peaches (thawed)
½ cup sugar
⅓ cup water
1 tbsp. of cornstarch
¼ tsp. cinnamon
dash of nutmeg

Topping
½ cup each of flour and water
¼ tsp. baking powder
8 tbsp. butter
1 egg, slightly beaten
1¼ tsp. vanilla extract

Directions:
Directions:
Heat oven to 375º. Combine all ingredients in large pan. Cook and stir on medium heat until mixture comes to a boil and thickens. Stir and simmer 1 minute. Pour into 2 quart glass baking dish. Bake while preparing topping, approximately 10 minutes.

Topping:
Mix flour and baking powder, set aside. Blend sugar and butter, add flour mixture. Stir until combined. Beat egg and vanilla until combined. Work the mixture into the dough with your hands and for dough ball. Chill for 30 minutes. Drop dough on hot, prepared fruit in heaping tablespoons. Continue baking at 375º for 35-40 minutes, until golden brown or for total baking time of 45 to 55 minutes for both cobbler and topping. Serve warm with vanilla ice cream.
