2 cups flour
2 cups sugar
2 tsp soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
3 cups ground carrots
⅔ cup chopped pecans

1 ½ cup salad oil
4 eggs
Cream Cheese Icing:
6 oz cream cheese
½ stick margarine (melted)
¾ pound of powdered sugar.

Directions:

Mix flour, sugar, soda, baking powder and cinnamon; set aside. Mix eggs, salad oil, carrots and nuts. Mix in dry ingredients. Pour into a greased and floured 9x13 pan. Bake 20-30 minutes at 350° until toothpick inserted in middle comes out clean. For icing, blend cream cheese and melted margarine, add powdered sugar until desired consistency. Frost cooled cake.
