1 yellow cake mix
1 1/2 cups sweetened coconut
2 Tbsp melted butter
1 small pkg vanilla pudding
2 cups milk, divided
11 oz cream cheese, softened
1- 20 oz can crushed pineapple
1 container Cool Whip

Directions:
Bake cake in sheet cake pan (11x15x2) according to package directions. Allow to cool. Meanwhile, toss coconut with melted butter; spread in a shallow pan. Place in a 350° oven for 5 minutes. Watch carefully and stir once or twice until coconut browns. Mix pudding with 1 1/2 cups milk; allow to thicken. Beat cream cheese and remaining 1/2 cup milk. Add pudding mixture and beat until well blended. Spread on cooled cake. Drain pineapple and sprinkle over pudding mixture. Cover pineapple with Cool Whip; top with toasted coconut.
