2 Cornish Hens
1 ¼ cup white wine
1 tsp tarragon
½ tsp salt
¼ cup butter, melted
1 cup shredded Swiss cheese
8 oz fresh mushrooms, halved

Directions:
Directions:
Split birds up back, remove backbone and tuck drumsticks. Marinate for 30 minutes in 1 cup white wine, salt, & tarragon. Pat dry. Mix melted butter with 1/4 cup wine; set aside. Place in a baking pan skin down and brush with butter mixture. Broil until brown. Turn and cover with shredded cheese. Set oven at 400°, place hens in the oven and bake for 25 - 30 minutes basting often with butter and wine. Add mushrooms 10 minutes before end of baking time.
