2 Cornish Hens
1 cup white wine
1 tsp tarragon
tsp salt
cup butter, melted
1 cup shredded Swiss cheese
8 oz fresh mushrooms, halved

Directions:
Directions:
Split birds up back, remove backbone and tuck drumsticks. Marinate for 30 minutes in 1 cup white wine, salt, & tarragon. Pat dry. Mix melted butter with 1/4 cup wine; set aside. Place in a baking pan skin down and brush with butter mixture. Broil until brown. Turn and cover with shredded cheese. Set oven at 400, place hens in the oven and bake for 25 - 30 minutes basting often with butter and wine. Add mushrooms 10 minutes before end of baking time.
