Parmesan Crusted Tilapia Recipe

cup Italian bread crumbs
cup Parmesan cheese
3 Tbsp vegetable oil
4 cups zucchini, sliced
4 cups squash, sliced
2 cups red bell pepper slices
2 cups onion slices
1 Tbsp Italian seasoning
1 tbsp course salt
1 Tbsp chopped garlic
cup extra virgin olive oil
36 oz tilapia fillets
1 cups alfredo sauce
8 oz angel hair pasta

Preheat oven to 450.

Mix bread crumbs, cheese, and 3 Tbsp vegetable oil in small bowl. Mix thoroughly.

In a large bowl, mix vegetables, Italian seasoning, salt, garlic, and olive oil. Place onto baking sheet in a single layer.

Place tilapia fillets in a non-stick shallow baking pan. Pour 3 Tbsp Alfredo on each fillet and spread evenly. Sprinkle 1/3 cup crusting on each fillet and pat firmly.

Place fish on top rack of oven with vegetables below. Cook fish 15 minutes, vegetables 20. Meanwhile, cook and drain noodles. To serve, toss vegetables with pasta and serve fish on top.
