You will need a large sterilized jar with lid

Cider vinegar
Seasoned rice wine vinegar
Sugar
Kosher salt
Peppercorns ( slightly crushed)
Red pepper flakes
Bay leaves (2)
Water

Veggies cut into bite size pieces
Use what you like, here is what I used:
Cauliflower,thin sliced red onion,Serrano peppers
Carrots,jalapeņo peppers.

For The Brine
Use equal parts vinegar and water. Amount will depend on the size of the jar used.
One tablespoon kosher salt for every 2 cups of liquid
1/4 cup of sugar ( if using) for every 2 cups of liquid
1 tablespoon of peppercorns slightly crushed
1tablespoon red pepper flakes
2bay leaves

Bring water,salt,sugar and vinegar to a boil and turn off heat

Cut up veggies into bite size pieces and place in a clean sterilized jar leaving a couple inches room at the top

Add peppercorns,red pepper flakes and bay leaves to the jar of veggies
Pour hot liquid over veggies
Let cool to room temp and then refrigerate
You can the next day but they will be better in 2 weeks.
