1box yellow cake mix
4 lrg eggs
1 c. Oil
1 can mandarin oranges with juice

Icing:
1 lrg can crushed pineapple
1 lrg pkg vanilla instant pudding
1 8-9 oz tub cool whip

Directions:
Directions:
Mix together all cake ingredients and pour in 2 or 3 prepared layered pans. Bake at 350º for 25-30 minutes or until knife inserted in middle comes out clean. Remove from pans and let cool.

Make icing; mix all together with spoon, spread in between layers and the rest of cake. Keep refrigerated, it’s much better served cold.

I use whatever I can get sugar free.

This recipe came from my Mother-in-law, may she Rest In Peace. This is literally the best cake ever! This will be your favorite cake from now on. It’s great anytime but will especially enjoy during the summer.
