2 cups arborio rice
6 cups chicken broth
½ onion chopped
2 T extra virgin olive oil
1 cup dry white wine
1 envelope of saffron
¼ tsp salt
1 cup grated parmesan cheese
4 T butter
pepper to taste

Directions:
Directions:
Heat the chicken broth and keep it simmering.

In a casserole heat the olive oil and cook the onion until softened, about 2 minutes.

Add the rice and continue stirring until translucent. Add the wine and stir until evaporated then start adding one laddle of hot chicken and stir frequently until the liquid has absorbed. Keep cooking over medium heat, adding broth as needed. After 10 minutes add the saffron with the broth. Keep adding broth until the rice is tender about 20 to 25 minutes. Then take off the heat add the butter in pieces and the grated cheese and stir vigorously until creamy. Serve immediatley
