Meat Loaf:
1 lb ground beef
¼ cup onion, diced
¾ cup tomato juice
¾ cup cracker crumbs
¼ tsp salt
1 egg

Topping:
Ketchup
mustard
brown sugar

Gravy:
¼ cup drippings
¼ cup flour
1 ½ cup water

Directions:
Directions:
Preheat over to 350°.

Meatloaf: Combine all ingredients and mix well. Shape into loaf, place in pan, and bake at 350° for 1 to 1 ½ hours.
Spread topping on meatloaf and return to the oven for approx 5 minutes.

For gravy: Place drippings into a sauce pan and heat, stir in flour and cook for 1 minute. Add water, heat until thickened, add salt to taste.

Ultimately the credit for this recipe should be my grandmother, Nora Frerking. While my mom, Elda Rist made the same meatloaf I can't ever recall her making the gravy to go with it. That was all Grandma. Add mashed potatoes and green beans and you have a meal that we would, and have, requested upon returning from vacation. Good home cooking, you can't replace it. - Teri
