Zucchini Bread Recipe

2 cups flour
1 tsp salt
1 tsp baking soda
tsp baking powder
1 tsp cinnamon
3 eggs
1 cup oil
2 cups sugar
2 tsp vanilla
2 cups grated zucchini
cup chopped pecans

Preheat over to 325. Use butter to thoroughly grease 2 loaf pans.
Combine dry ingredients in medium bowl. In large mixing bowl, beat eggs. Add sugar slowly, then mix in oil and vanilla. Sift in dry ingredients. Add zucchini and nuts, if desired, blending well. Pour batter into loaf pans and bake at 325 for approximately 1 hour, or until toothpick inserted in center comes out clean.
