Potato Sweet Roll Dough

½ cup butter
½ cup sugar + 1 tsp
1 tsp salt
1 ½ cup milk
2 pkg yeast
2 eggs, slightly beaten
1 cup mashed potatoes
4 ½ - 5 cups flour

Filling:

Directions:
Place margarine, ½ cup sugar, and salt in large mixing bowl. Scald milk and pour half over margarine mixture in bowl. Cool remaining milk to lukewarm before adding yeast and 1 teaspoon sugar, stirring until dissolved. Pour yeast mixture into mixing bowl and add potatoes and eggs, blending well. Add flour a small amount at a time, kneading well. Cover bowl with a damp towel and let mixture sit in a warm place for approximately 1 ½ hours, or until it doubles in size. Punch down; let rise until almost double again. Punch down and roll flat on a well floured surface. Spread melted margarine over flattened dough. Sprinkle with cinnamon and sugar. Roll dough into a long log and cut into 1 inch sections. Place each section flat in a greased baking pan, allowing sides of each section to touch. Bake at 350° for approximately 15-20 minutes, or until golden brown.

vanilla

Combine melted butter and powdered sugar with a small amount of
milk and vanilla to make frosting. Pour frosting over cooled rolls.
