- 15 oz. ricotta Cheese, whole milk
- 2 eggs, lightly beaten
- 1 ¼ cups fresh grated parmesan cheese
- ¾ to 1 cup all purpose flour
- 3 tbsp unsalted Butter

Directions:
Directions:
1) Bring a large pot of salted water to a boil. 2) In a mixing bowl combine the ricotta, eggs, and Parmesan with some salt and pepper. 3) Add about 1/2 Cup of flour and stir. 4) Continue to add flour little by little until an very sticky dough is formed. 5) Take a small amount and drop into boiling water. This is your test run. Wait until the gnocchi floats to the top and cook for 4 minutes longer. Remove with a slotted spoon and taste once cool enough. Adjust dough with salt, pepper, and flour. 6) Once you have achieved the correct flavor and texture you are ready to roll it. 7) Roll the dough into long think "snakes" and cut 3/4 inch segments with a bench scraper or knife. Lightly dust with flour so they do not stick together. 7) Cook the gnocchi as mentioned in step 5. 8) In a large skillet melt butter and brown slightly. Add the gnocchi and gently shake. Do not toss the pan. The idea here is to get on side of the gnocchi crispy and deep brown. 9) Transfer to a plate or bowl and garnish with more Parmesan.

You can add herbs and aromatics to the buttered skillet to achieve a deeper flavor. Sage, Thyme, and Rosemary all work well.

The gnocchi is soft and light but will still satisfy your hunger. Perfect for a cold winter's night.
