3 Tbsp. butter
¼ tsp. garlic powder
½ tsp. salt
⅛ tsp. pepper
3 Tbsp. flour
2 cups milk
1 lb. Swiss cheese
or ½ lb. each Swiss and Cheddar cheese
3 egg yolks, beaten

Directions:
Directions:
Melt butter with garlic, salt and pepper; add flour. Cook until mixture starts to bubble. Add milk to make a white sauce; heat until thick. Temper eggs by beating in a small amount of warm sauce. Mix eggs into the white sauce. Slowly add cheese until melted. Don't overheat as this can make the Swiss cheese stringy. Serve with cubes of sourdough or rye bread.
