2 large eggs, well beaten

2 Tbsp salt

2 cups ( 12 oz) uncooked elbow macaroni

1/4 cup butter softened

2 - 2 1/3 cups evaporated milk ( 1 large & 1 small can )

1 1/2 lbs extra sharp cheddar cheese

Paprika
dash onion salt

optional - diced ham, bacon, green onions, carmalized onions, or any other " extras" you like

pre heat oven to 350º

cook macaroni for about 12-13 minutes, do not over cook, drain mac, add butter to pot with drained mac, and stir till melted, add the onion salt or powder

pour the eggs into evaporated milk

butter a 2 quart casserole

put a layer of mac in casserole, then a layer of cheese, another of mac, another of cheese, continue till all mac and cheese is in dish ending with cheese on top

pour the milk egg mix over all, fork through evenly, and top with a good sprinkling of paprika

Bake uncovered for 45 minutes until brown and bubbly
