3 lbs. chicken
2 pkgs. Italian Salad Dressing mix
2 tbsp. flour
2 tsp. salt
1/4 c. lemon juice or vinegar
2 tbsp. melted margarine
1 1/2 pt. oil
1 c. milk, soda or beer
1 1/2 - 2 c. pancake mix
1 tsp. paprika
1/2 tsp. sage
1/4 tsp. pepper

Using salad dressing mix dry to make a paste with flour, salt, lemon juice and margarine. Dip chicken in this and let stand for 2 hours. 1 hour before serving heat oil. Oil should be 3" deep in pan at 425. Dip chicken in milk, soda or beer to wet (don't drown). Dip immediately into pancake flour mixed with paprika, sage and pepper. Let each piece dry 4-5 minutes. (Don't over coat or will fall apart). Fry in oil 4-5 minutes.
