Ingredients: Cookies:
3 cups flour 3/4 cup dark cocoa 1 tsp baking soda 1/2 tsp salt 1/4 tsp baking powder 1 1/2 cups butter, room temp 2 cups sugar, plus extra for tops of cookies 2 large eggs 1 tsp pure vanilla
Filling:
1 cup butter, room temp 2 cups icing sugar 1 Tbsp pure vanilla

Directions:Preheat oven to 350 degrees.
Cookies: Sift together flour, cocoa, soda, salt and baking powder. Set aside. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating after each. Add vanilla and beat to combine. Turn mixer to low, and add dry ingredients. Use ice cream scoop to drop 24 equally sized portions onto cookie sheets. Fill a small bowl with sugar. Press drinking glass onto dough to make bottom slightly sticky. Dip the glass in the sugar and press onto the dough. Repeat for each cookie. Bake for 15 to 17 minutes until cookies are firm around edges but soft in middle. Cool completely.
Filling: Cream butter and icing sugar until pale in colour. Add the vanilla. Continue to beat until light and fluffy. Spread on 12 cookies. Press remaining cookies on top. |

Notes: Butter Bakery in Dunbar made these cookies as their signature item. Even Oprah Winfrey sent for these cookies for her "Favorite Things" column in her "O" magazine - twice. Not that she included them, but she liked them! BTW - this bakery charges $5 per cookie. Enjoy!
