1 lb boneless, skinless chicken breast or thighs
3 TB soy sauce
¼ tsp powered ginger. (I've added minced ginger instead sometimes)
½ cup hoisin sauce
pepper and salt to taste
1 clove garlic, minced

Wooden or metal skewers (If wooden, soak in water for 5-10 mins before use)

-Cut the chicken into long thin strips.
-In a bowl or zip-top bag combine soy sauce, ginger, hoisin, salt, pepper, garlic. Place 2 TSP of the marinade in a small bowl, put in fridge to use baste the chicken while it cooks.
-Add chicken to the remaining marinade in the bowl or bag, toss well to coat.
-Marinate for at least 30 minutes. A few hours or overnight is best.

-Grill outside - remove chicken from marinate and discard marinate. Skewer the chicken weaving it on the skewers. Cook only a few minutes per side. You need to cook the chicken, but it can over-cooks and dries out quickly. Baste with the reserved marinate. This is how I cook them.

-Cook inside - Preheat oven to 400º. Remove chicken from marinate and discard marinate. Skewer the chicken weaving it on the skewers. Place on foil-lined cookie sheets in a single layer. Bake for 15-25 minutes (breast eat doesn't take as long as thighs) Flip half way through and baste with reserved marinate.
