1 lb ricotta
1½ lb fresh spinach
1 egg yolk
1 whole egg
1 T flour
3 T grated parmesan
salt and pepper
nutmeg
5 T butter
fresh sage

Directions:
Directions:
Wash the spinach and drain well. Put in hot pan till wilted. Season with salt, pepper and nutmeg.

Let the spinach cool and drain well then put in a clean dish towel and wring it out very well.

Mix ricotta, spinach, eggs, flour and parmesan with the spinach.

With the help of a teaspoon form small balls and place on an floured cookie sheet in a cool place.

Poach the spinach balls in salted water until they come to the surface.

In the meantime crisp the sage in the butter then add the drained malfatti to the sage butter.

Serve hot
.
