Chocolate Oatmeal Cake

1 cup rolled oats
1½ cup boiling water
½ cup shortening
1½ cup sugar
2 eggs
1 cup sifted flour
½ cup cocoa
1 tsp. baking soda
½ tsp. salt
1 tsp. vanilla

Directions:
Directions:
Mix rolled oats and boiling water together; let cool. Cream together shortening, sugar and eggs. Combine flour, cocoa, baking soda, salt and add to the creamed mixture; add vanilla. Add the oatmeal mixture; beat until smooth. Pour into a 9x13-inch pan.

Bake at 350º for about 35 minutes.
 

Chocolate Marshmallow Frosting


Ingredients:

2 (1 oz.) sqs. chocolate
2 cup mini marshmallows, divided
¼ cup water
¼ cup margarine
2 cups powdered sugar
1 tsp. vanilla
1/2 cup chopped nuts (optional)

Directions:
Directions:
In a saucepan heat the chocolate, 1 cup marshmallows, water and margarine; stir until blended. Cool slightly. Then add the sugar and vanilla. Beat until smooth. Add 1 cup marshmallows and nuts. Spread on the cake immediately before it sets.
