1 cup shortening
1 cup white sugar
1 cup brown sugar
3 eggs
1 tsp. vanilla
½ tsp. baking soda
½ tsp. salt
4 cups flour
Filling:
2¼ cups pitted dates about 1 lb. cut in pieces
1 cup sugar
1 scant cup water
1 cup pecans, chopped

Cream shortening and sugars together until fluffy; add egg and vanilla; mix until well combined. Sift together dry ingredients and add to the creamed mixture; mix well. Chill 1 hour.

Make date nut filling by combining dates, sugar and water in saucepan. Bring to a boil; reduce heat. Cover and simmer 10 minutes, stirring often. Add nuts. Cool. Divide dough into 2 balls. Roll out each ball into a ¼-inch thick rectangle. Place the date nut filling over the dough. Roll up jellyroll style. Chill well. Slice cookies ¼-inch thick; place on lightly greased cookie sheet.

Bake at 350º for 10-15 minutes or until evenly browned.
