8 lbs. tomatoes, peeled, chopped, cored
1 medium onion, chopped
¼ tsp. cayenne spice
1 cup sugar
1 cup white vinegar
1½ tsp. whole cloves
1½ inches stick cinnamon, broken
1 tsp. celery seed
4 tsp. salt

Peel tomatoes. Put tomatoes into a large kettle with onions and cayenne spice. Bring to a boil; cook about 15 min. Put tomatoes thru a sieve; return to the kettle; add sugar. Bring to a boil. Then simmer 1½ to 2 hours until mixture is reduced to half as much. Use a ruler to measure.

Meanwhile in a saucepan, combine vinegar, cloves, stick cinnamon and celery seed. Bring to a boil; remove from heat, cover and let stand.

Strain vinegar and add to tomatoes; add salt. Simmer until desired consistency, about 30 minutes. Pour hot catsup into hot jars, leaving ½ inch open space on top. Process in a boiling water bath for 5 minutes. Makes 2 pints.
