2 ½ C. flour
1 tsp. baking soda
2 C. sugar
1 tsp. salt
1 C. chopped nuts
3 eggs, beaten
1 C. oil
1 tsp. vanilla
8 oz. crushed pineapple w/ juice
1 ½ C. coconut
2 bananas, mashed

Directions:
Directions:
Combine flour, baking soda, sugar, salt and nuts by hand. Add eggs, oil, vanilla, pineapple, coconut and bananas. Mix until just moistened. Do not overmix.
Pour into 2 large or 5 small greased loaf pans, filling pans three-fourths full.
Bake ate 350º for 55 to 60 minutes, or until toothpick inserted in center comes out clean.
Let cool in pan 10 minutes and turn out onto wire rake to coo.
