1 lb ground beef or ground sirloin
1 15-oz can of crushed tomatoes, un-drained
1 15-oz can of diced tomatoes, un-drained
1 15-oz can of black beans, drained
1 15-oz can of dark red kidney beans, drained
1 15-oz can of sweet kernel corn, drained
1 4-oz can of hatch green chilies
1 cup of fresh salsa
1 green bell pepper, diced
1 red bell pepper, diced
1 sweet yellow onion, diced
2 garlic cloves, minced
1 envelope of chili mix seasoning
2 tbsp of chili powder
1 tsp of onion powder
1 tsp of cayenne pepper
1/2 tsp of salt
1/2 tsp of pepper
2 tbsp of olive oil

Topping: shredded cheese and diced onion

Directions:
Directions:
Over medium heat, brown ground meat in 1 tbsp of olive oil and add chili mix and a small amount of water. Set cooked meat aside until remaining ingredients are prepared.

In the same pan as the meat, combine the bell peppers, onion, garlic and remaining olive oil. Cook over medium heat until good consistency.

Add all canned items and salsa to the pan. Add the remaining seasoning. Bring to low boil, stirring often. Mix well until beans and corn are cooked through.

Add in meat to mixture. Mix well.

Serve warm, topped with cheese and onion.
