1 Lb. of red beans

1 lb. of Chappell Hill Garlic Sausage, quartered
1 chopped onion
2 chopped toes of garlic
2 tbsp parsley
1 tsp thyme
2 whole bay leaves crushed

Directions:
Directions:
Soak red beans in 5 qt pot in water covering the beans overnight. In the morning, drain water and add more water to cover the beans. Shake salt three times in beans, cover and bring water to a boil until beans are soft. When soft mash with a large spoon about one spoonful on the inside of the pot and stir into beans. Add sausage cut into quarter pieces. Add rest of ingredients Add more water to cover beans and sausage and cook over low heat about 2 hours uncovered.
Stir every now & then. Add salt and pepper to taste. You may have to add a little more water
