7 medium potatoes, peeled and sliced in rounds
3 medium onions, finely chopped
4 oz. butter (2T.)
salt
freshly ground black pepper

Directions:
Directions:
Dry potato slices in a towel to remove excess moisture. Grease a loaf or cake pan and place the potatoes and onion, in layers, beginning and ending with a layer of potatoes. Dot each layer with a little butter (leave at least 1 oz. butter to dot over the top) and season each layer with a little salt and pepper. Cover with aluminum foil and cook for 1½ hours at 300º. Remove the foil cover for the last half hour so that the cake has a chance to brown. Turn the cake onto an ovenproof serving dish and place under the broiler for a couple of minutes before serving. Serves 6.
