4 cups of Old Fashioned oats
1½ cups sliced almonds
½ cup packed light brown sugar
½ tsp. salt
½ tsp. ground cinnamon
¼ cup canola oil
¼ cup honey
1 tsp. vanilla
1½ cups dried cranberries or raisins

Directions:

Preheat oven to 300º. In a bowl mix the oats, almonds, brown sugar, salt and cinnamon. In a saucepan warm the oil and honey. I warm them in the microwave for 45 seconds. Stir in vanilla. Carefully pour liquid over oat mixture. Stir gently with a wooden spoon. Finish mixing with your hands.

Spread granola in a 15 x 10 x 1 inch baking pan. Bake 40 minutes, stirring carefully every 10 minutes. Transfer pan to a cooling rack and cool completely. Stir in the raisins or cranberries. Store in an air tight container one week at room temperature or 3 months in the freezer.

Don-Don and I stayed at a PEO bed and breakfast in Asheville, NC on our way back from Florida at the end of one summer. The owner of the B & B had this granola every morning and it was delicious. She was nice enough to send me the recipe when we got home.
